Dr. Karen Gibson
Dr. Gibson was added to the Men’s and Women’s Cross Country staff as their official dietitian and nutritionist prior to the 2018 season. She will work with cross country athletes individually and as a group as a part of their training program during the season and throughout the school year.
Dr. Karen Gibson has been a faculty member at Viterbo University since 1994, teaching classes in Sport Nutrition and Medical Dietetics. She has served as the Chair of the Department of Nutrition and Dietetics since 2010 and has contributed seven years as Program Director or Interim Program Director of the Dietetic Internship and Coordinated Program at Viterbo.
After receiving a Doctorate in Clinical Nutrition from Rutgers University in 2012, Dr. Gibson has served as an adjunct instructor at Rutgers. She teaches summer courses in Exercise Physiology.
Dr. Gibson is a certified ISAK Level III Anthropometrist, which regards measurement of human body composition and its ability for function and movement. She is also a Metabolic Efficiency Training Level I-certified HMP. Dr. Gibson has been a Board Certified Specialist in Sports Dietetics since its inception in 2007.
